A lot of the dishes are cooked in a Josper – a charcoal-fired grill and oven that invokes the nostalgia of summer barbecues all year round. In temperatures of around 350 degrees, the chefs can char-grill, smoke, slow-cook and roast the most delicious and tender meats, fish and vegetables.
