Formerly Moshi Moshi Brighton, Moshimo are known for their handmade sushi, the authenticity of their hot Japanese dishes, and the sustainability of their fish, for which they have won a brace of prestigious national and international awards. Located in The Opticon, a beautiful modernist building in Bartholomew Square, the building was designed to resemble a lantern floating on the square, and was the finalist for the FX Interior Design Award and the Civic Trust Award. The walls are inspired by shoji screens and slide open just like in a traditional Japanese room, opening the whole restaurant up to the outside in summer. Moshimo believe in the fundamental principles of Japanese culinary tradition. They only use the freshest seasonal ingredients to create food that is bold in its simplicity. In Japan, nothing is overcooked; there are only degrees of rawness. It is a way of preparation which respects what we eat and keeps it close to its natural essence.
