Bill Collison, founder of Bill's, opened the first Bill's in Lewes, East Sussex, in 2001. Built on the same site where Bill had been running a successful greengrocery for several years, Bill's Café & Produce Store, as it was then known, was an instant success. The aim was to make a place that was colourful and exuberant, with dishes that were really tasty and also made you smile, that put every day and unusual seasonal ingredients together and gave everyone lots of ideas to take home with them. The team at Bill's baked, cooked and served deliciously different food, hung skeins of raffia from the ceiling, stacked towers of produce for people to buy and hired lively, enthusiastic staff to look after their customers. They wanted Bill's to be somewhere that really celebrated food and was welcoming to everyone, a place that felt like the next best thing to home. Breakfast at Bills is a great way to start your day; from a humble bacon or sausage sandwich to a bells-and-whistles super classic great British breakfast. Weekends are a different story, time to kick back and turn breakfast into brunch, complete with newspapers, freshly squeezed orange juice and plenty of tea or coffee. Located just off the high street, Bill's Tunbridge Wells restaurant is in a great location for shoppers, and has plenty of leather sofas, nooks and crannies. There is also a lovely terrace outside for when the sun is shining.

Friendly and helpful staff really made this visit enjoyable. The food was good, with reasonable sized portions - we couldn't manage 3 courses despite having only the bread basket to start. The tables don't feel too close, but that might feel different if visiting when more tables are occupied. The themed decor felt cluttered to me, but just personal taste. It certainly wouldn't stop me visiting again.

We had a pre-wedding dinner booked at Bill's for the wedding party (19 of us) and booking and pre-ordering was super easy and efficient. We had a few hiccups on the night with guests having travel & breakdown issues and the staff at Bills were fantastic at accommodating the unexpected changes. They allowed us to cancel certain orders and delay others whilst we waited for further information and then got the main meals out for the stragglers at gone 10:15pm. Service was with a smile and a joke or two and we had a very enjoyable evening. the sticky toffee pudding was incredible! They even gave us a wedding gift as we left which was a lovely and unexpected touch! Thank you all at Bill's.

We quite often treat ourselves to breakfast on Saturday mornings. Usually full English for him, Eggs Royale for son and porridge with almonds honey and bananas for her. The staff are always extremely friendly polite and efficient. The food is excellent.
