Bill Collison, founder of Bill's, opened the first Bill's in Lewes, East Sussex, in 2001. Built on the same site where Bill had been running a successful greengrocery for several years, Bill's Café & Produce Store, as it was then known, was an instant success. The aim was to make a place that was colourful and exuberant, with dishes that were really tasty and also made you smile, that put every day and unusual seasonal ingredients together and gave everyone lots of ideas to take home with them. The team at Bill's baked, cooked and served deliciously different food, hung skeins of raffia from the ceiling, stacked towers of produce for people to buy and hired lively, enthusiastic staff to look after their customers. They wanted Bill's to be somewhere that really celebrated food and was welcoming to everyone, a place that felt like the next best thing to home. Breakfast at Bills is a great way to start your day; from a humble bacon or sausage sandwich to a bells-and-whistles super classic great British breakfast. Weekends are a different story, time to kick back and turn breakfast into brunch, complete with newspapers, freshly squeezed orange juice and plenty of tea or coffee. Bill's Horsham sits right in the middle of this pretty town, in what was formerly the town hall. A beautiful and prestigious building, the restaurant is spread across two floors. Downstairs is light and airy, upstairs is an altogether grander affair, with wood paneled walls and shutters, a rich and warm space, perfect when we turn the lights down low in the evening. A lovely restaurant any time of day, from breakfast through to dinner, there is also a spacious outside sitting area for watching the world go by when the sun shines.

every member of staff we encountered was charming and helpful. 5 of us ate breakfast and we all wanted to tweak the ingredients of our chosen dishes. we had a really good experience.

The quality of food continues to be very good at this Bills Restaurant. Both my friend and I tried something new on the menu. The starters and main course came from their specials menu. The asparagus was lovely, steamed and served with butter, but maybe need a little something added (garlic, chilli or almonds or pine nuts) to make it a little more special. Both the minute steak and chicken were beautifully cooked and served. Service seemed to be a little on the slow side yesterday, maybe down to the new menus we were told we're being served, hence the average service. But the staff continue to be polite and attentive. Looking forward to lunch again with my friend next week.
