Bill Collison, founder of Bill's, opened the first Bill's in Lewes, East Sussex, in 2001. Built on the same site where Bill had been running a successful greengrocery for several years, Bill's Café & Produce Store, as it was then known, was an instant success. The aim was to make a place that was colourful and exuberant, with dishes that were really tasty and also made you smile, that put every day and unusual seasonal ingredients together and gave everyone lots of ideas to take home with them. The team at Bill's baked, cooked and served deliciously different food, hung skeins of raffia from the ceiling, stacked towers of produce for people to buy and hired lively, enthusiastic staff to look after their customers. They wanted Bill's to be somewhere that really celebrated food and was welcoming to everyone, a place that felt like the next best thing to home. Breakfast at Bills is a great way to start your day; from a humble bacon or sausage sandwich to a bells-and-whistles super classic great British breakfast. Weekends are a different story, time to kick back and turn breakfast into brunch, complete with newspapers, freshly squeezed orange juice and plenty of tea or coffee. Bill's Clink Street restaurant is a cosy affair, with seating inside and out. Completely refurbished, the restaurant sparkles in the evening with the light of chandeliers and candles.

Menu choice was great and the food was delicious with prompt and polite service. My sons can be a bit fussy but they cleared their plates! Looking forward to returning.

The restaurant is well laid out with tables in separated niches making it good for conversation. The service was pleasant and friendly and plenty to choose from on the menu. And don't miss the chocolate brownie!

Having booked for lunch to celebrate my birthday we were pleased to be given a booth table. The service was excellent with a very polite waitress. We ordered drinks and a light lunch which arrived in good time. Unfortunately there was a slight issue with the chicken on my salad but this was quickly rectified and sorted with care and excellent service. Would definitely recommend for lunch and would return.

Visited Bill''s on a Saturday night for a family celebration. Arrived after 10pm. The staff were friendly and welcoming (and funny!). Food delicious. Service great. Good choice of interesting food on the menu. Even though our table was booked so late the staff never made us feel as if we were a nuisance or stopping them from going home! Highly recommend. Ooh and the yummiest chocolate brownie dessert I've ever eaten! Easy to book and amend booking online too.
