Golf is the signature dish at Dale Hill Hotel but of the two restaurants, the expansive fine-dining rosetted Wealden Restaurant is the star attraction, and it comes - perhaps inevitably - with vistas of the Golf course. Modern European cooking is par for this particular course, and it appears in some adventurous ideas: Supreme of Chicken with Parsley & Mustard Pomme Puree, Onion & Mushroom Fricassee & Red Wine Jus or Bee Pollen Goats Cheese Fondant with Flavours of Beetroot & Candied Brazil Nut and to finish go for Chilled Passion Fruit Parfait with Mango, Chilli Salsa and Coconut Sorbet.
