Cambium is located within Careys Manor Hotel in the New Forest, at the heart of fine dining in Hampshire. Using the New Forest as its inspiration, Cambium delivers on its promise of delighting your senses. Executive Head Chef Alistair Craig works tirelessly on exploring new dimensions of classic ingredients that are sourced and grown locally, ensuring they go from farm to fork in the shortest possible time. Alistair believes the enjoyment of food should engage all of your senses and be a journey through taste and flavour. For the interior, British designers Sue and Bonnie Stowell have drawn much inspiration from the New Forest creating a restaurant that takes advantage of the local areas rich natural resources, capturing its enchanting shapes and drawing on its warming natural tones.
