The Honours

Since opening his eponymous restaurant in Edinburgh's Port of Leith in 1999, Martin Wishart has firmly established himself as one of the UK's most highly respected chefs, currently holding one Michelin star, 4 AA rosettes and a score of 8/10 in the Good Food Guide. In addition, Martin won the title of AA Chefs' chef of the year 2010-2011. Martin trained under such renowned chefs as Albert Roux, Michel Roux Jr, Marco Pierre White, Nick Nairn, John Burton-Race, Marc Meneau and Charlie Trotter. Martin aims to further strengthen Scotland's reputation for good food and to inspire others with his unequivocal enthusiasm for the very best traditional and modern French cuisine. The Honours represents the exciting next step of his journey. The restaurant's name makes reference to the moment in Scottish history when Sir Walter Scott — who lived nearby — uncovered the Scottish Crown Jewels, also known as The Honours of Scotland. In addition, the name owes a debt to a rare 18th century book, "the Honours of the Table". In this celebrated volume, the author, Rev. Dr. John Trusler, advised the youth of the day on table etiquette, exclaiming that: "To do the honours of a table gracefully, is one of the outlines of a well-bred man..." Martin spent a great deal of time researching ideas for just the right balance of ambience, design and style for The Honours — drawing on inspiration from many successful restaurants around the world. The result: a unique menu which draws on the trusted artisan producers and suppliers, that combines seasonal, Scottish flavours in innovative, brasserie-influenced dishes. The Honours is located on North Castle Street in Edinburgh's New Town, just a short walk from the bars and boutiques of George Street, and a few minutes from the city's world-famous Princes Street.
