Pavement Vaults

The Pavement Vaults is a progressive charcoal barbecue canteen. Like the majority of York, Pavement Vaults and its earlier incarnations, are steeped in history. Originally it was part of Pavement, a medieval street dating back to 1378, but was bisected in order to make way for Piccadilly. Prior to the demolition the site was a coaching inn. Executive Chef Andy Annat is an industry legend and three times National Barbecue Champion. He even cooked for the Queen's 80th birthday at Balmoral and clinched Second Place at the Jack Daniel's World Championship Invitational Barbecue Competition. The menu follows Andy's simple doctrine of interesting cuts, cooked well and smoked in-house with a mixture of carefully selected fruit woods such as cherry, peach and pear. The more robust dishes are slow-smoked over harder woods such as hickory and oak. This is in addition to a range of bespoke rubs and marinades developed to ensure the meats are infused with the very best flavour. Tapped Brew Co products brewed weekly in the Leeds and Sheffield microbreweries are available at Pavement Vaults alongside 18 other rotating cask/keg products, which includes limited release brews and brewery collaborations. This is complemented by an extensive contemporary wine list and a great selection of modern classic cocktails selected by hospitality veteran Sam Wheatley.
